Comfort food!


The boys rush off to the gig in Berkhampstead that they is no way I am willing to trek to on this cold, dark Wednesday night. The perfect opportunity to spend the evening lying in bed, catching up on Homeland and chopping on Rachel Comfort Food!




As with every recipe that comes through my hands, what started off as relatively simple morphs into something heinously complicated. My intention was almost puritanical: for a tin of chickpeas flavoured with some fried onion, garlic, olive oil, lemon juice, crumbled feta and mixed with salad leaves. This is what I did:

Ingredients:
1 aubergine
2 small onions
1 clove of garlic
1 tin of chickpeas
a bit of chorizo
a bit of feta
salad leaves

Dice the aubergine and sprinkle with salt for 10 minutes.

Chop onion in big chunks.

Rinse aubergine thoroughly and put under grill with onion, slices of chorizo and a liberal amount of olive oil. (My grill is pretty much on fire so every gets kind of burnt but it that nice barbequing kind of way.

Once the aubergine and onion are cooked, chop and add a clove of garlic. Put back under grill for 2 minutes.

Empty chickpeas and leaves into a bowl. Crumble feta on top.
 
Add the grilled stuff to the bowl and mix.

Drizzle some balsamic glaze on top.

It was exactly what I wanted to curl up with. The barely cooked garlic had that almost spicy hint, the onions were sweet and caramelized and the aubergine was sumptuously soft.
